Healthy Shrimp Tacos with Lime Yogurt Sauce

Ingredients for tacos:

1/2 bag shrimp, tails removed (Can use white fish alternatively)
2 teaspoons avocado oil
1/2 lime, juiced
1/2 teaspoon of coriander, (optional)
1 teaspoon cayenne pepper
1 teaspoon smoked paprika
1 teaspoon chili powder
1 pinch sea salt
1 pinch pepper
1 clove garlic, Can use garlic powder alternative
4 corn tortillas
1/2 whole cucumber, (chopped up for garnish)

Ingredients for Lime Yogurt Sauce:

1/4 cup Greek yogurt
1/4 whole ripe avocado
1/4 small jalapeño pepper
1/4 lime, juiced
1 pinch sea salt
1 sprig of cilantro
1 sprig of fresh parsley
1 clove garlic
2 teaspoon nutritional yeast, (Optional but gives a bit of a cheesy flavour and is super high in B12)

Ingredients for Creamy Carrot and Cabbage Slaw:

1/4 cup purple cabbage, shredded
1/2 whole carrot, grated
2 teaspoon mayonnaise, can use greek yogurt as a sub
1 pinch chili powder
1 pinch sea salt
1 teaspoon apple cider vinegar, alternatively lime juice
1 sprig cilantro, chopped

Directions:

1.A few hours before cooking, combine the prawns/shrimp with the marinade and put in the fridge.

2.Preheat the oven to 350F to heat up tortilla shells. When ready to prepare your shrimp, throw the contents for the lime yogurt sauce into a food processor or decent quality blender and puree. Taste to see if you’d like additional salt/seasonings or heat. Put aside in the fridge.

3.Combine contents of the cabbage slaw in a mixing bowl and set aside in the fridge as well. Put tortillas in the oven wrapped in parchment paper or in a pan (can use foil as well but do discourage this because the leaching of aluminum)

4.Heat a skillet on medium heat with some avocado oil, olive oil or coconut oil. Add in the shrimp and cook for about three minutes on each side before flipping and cook until white all the way through. Alternatively, if you have a bbq these would be excellent grilled.

5.Chop up cucumber and extra herbs (cilantro, parsley) and then assemble your tacos with the slaw, sprouts, herbs and yogurt sauce and enjoy. This would also be good as a shrimp burrito bowl served on a bed of short grain brown rice with lots of leafy greens added. Another option is to get some lettuce heads and make as a lettuce wrap.
