Creamy Mushroom Soup (Vegan)

Ingredients:

2 cups mushrooms, cremini diced
1 whole yellow onion, small and diced
2 whole carrots, diced
2 whole yellow potatoes, peeled
2 cups vegetable broth
1 cup cream, or milk alternative
3 cloves garlic, minced
1 teaspoon basil, dried
1 teaspoon sage, dried
1 tablespoon nutritional yeast
1 sprig rosemary
1 sprig thyme
1 tablespoon smoked paprika
2 teaspoons nutmeg
1 teaspoon salt
2 teaspoons pepper
2 tablespoons apple cider vinegar
1 tablespoon ground turmeric
1 tablespoon ground flaxseed, (optional)
1 drop liquid smoke, (optional)

Directions:

1.Preheat oven to 350F while chopping up mushrooms, potatoes and garlic cloves. I prefer chopping the mushrooms quite small so that they cook quickly and have smaller bite-size pieces. Separate half of the mushrooms.

2.Put HALF of the chopped mushrooms in a pouch of aluminum foil with olive oil and salt with a bit of the garlic (approx. 1 clove). Put in oven. Fill a pot with water and boil all of the potatoes (chopped) while the mushrooms roast in the oven. Take this potato boiling/mushroom roasting time to chop up the onion, carrots, fresh herbs, and remainder of garlic. Add a bit of olive oil to a sauté pan and heat at med heat.

3.Add all of the chopped veg (including remainder of mushrooms) to the pan with the fresh chopped herbs. After 9 minutes or so remove and strain potatoes and add HALF of the potatoes to a blender (Vitamix is my fave). Put the other half aside. Add nut milk or and veg broth to the blender. Remove mushrooms from oven (ideally they will be fairly well done. Check them after 6 minutes or so and if they aren't just turn the heat up to 400 and leave foil open at the top) and add to the blender as well.

4.Once veg in pan is sautéed enough to be aromatic and cooked through, add it to the soup mixture. Add the remainder of potatoes that were set aside. If it seems a little too thick you can add more veg broth periodically. Add all of the dry ingredients to the soup and let it simmer on 3-4 heat for about 20 minutes, stirring occasionally. This gives it time to let all the flavours come together! Enjoy with some tasty bread.
