Egg and Turkey Breakfast Bites

Ingredients:

6 eggs, organic preferred
5 turkey, sausages chopped up *Nitrate free is a must
1/2 pepper, red yellow or green, chopped
1 tablespoon fresh parsley, or cilantro, chopped
1/2 cup arugula, finely chopped
1/2 zucchini, chopped
1/2 cup mushroom, chopped
1 cup milk, or milk alternative
1/4 onion, chopped
1/4 clove clove garlic, minced
2 tablespoons cottage cheese
1 teaspoon olive oil
2 teaspoon paprika
1 teaspoon sea salt
1 teaspoon ground pepper

1 tablespoon pure maple syrup

Directions:

1.Preheat oven to 325F and oil (or spray with oil spray) either an 8x8 baking pan or the holes in a small muffin tin tray.

2.Toss chopped up turkey sausage(or veggie sausage if vegetarian) with the tablespoon of maple syrup. Sautée in a skillet while whisking all of the wet and dry ingredients together in a bowl.

3.Add all of the chopped up veggies into the bowl and then add the meat or meat substitute and mix together.

4.Pour the bowl mixture into a small square baking pan or into small sized muffin tin and bake in the oven for around 25 minutes or until a toothpick comes out clean when you stick it into the middle!

5.Cut into square serving sizes if baked in the pan and store in the fridge for up to a week. Alternatively, you can freeze these so they last longer and just remove from the freezer to heat up when needed.
