Healthy Shrimp Tacos with Lime Yogurt Sauce

Ingredients
Serves 2 (4 tacos)
Shrimp
½ bag shrimp, tails removed (or white fish)
2 tsp avocado oil
Juice of ½ lime
1 tsp cayenne pepper
1 tsp smoked paprika
1 tsp chili powder
½ tsp coriander (optional)
1 clove garlic
1 pinch sea salt and pepper
4 corn tortillas
½ cucumber, chopped for garnish
Lime Yogurt Sauce
¼ cup Greek yogurt
¼ ripe avocado
¼ small jalapeño
Juice of ¼ lime
1 pinch sea salt
1 sprig cilantro
1 sprig fresh parsley
1 clove garlic
2 tsp nutritional yeast (optional)
Carrot & Cabbage Slaw
¼ cup purple cabbage, shredded
½ carrot, grated
2 tsp mayonnaise (or Greek yogurt)
1 pinch chili powder
1 pinch sea salt
1 tsp apple cider vinegar or lime juice
1 sprig cilantro, chopped
Method
A few hours before cooking, combine the shrimp with the marinade ingredients and refrigerate.
When ready to cook, blend all lime yogurt sauce ingredients in a food processor until smooth. Refrigerate.
Mix together all carrot and cabbage slaw ingredients in a bowl. Refrigerate.
Preheat oven to 350°F. Wrap tortillas in parchment paper and warm in the oven.
Heat a skillet on medium with avocado oil. Cook shrimp about 3 minutes per side until white all the way through.
Assemble tacos with slaw, shrimp, cucumber, fresh herbs, and a generous drizzle of lime yogurt sauce.
Notes:
Serve in lettuce wraps or over rice as a burrito bowl.
