Broccoli Salad with Yogurt Dressing
Ingredients:
1 head broccoli, chopped into bite sized pieces
1/2 cup purple cabbage, shredded
1/2 cup Greek yogurt, or skyr
1/4 cup mayonnaise, (ideally organic/sugar free)
1 teaspoon garlic powder
1/2 cup dried organic cranberries
1/2 cup red grapes, halved or quartered (optional)
1 teaspoon sea salt, (more to taste)
1 teaspoon ground pepper, (more to taste)
1/4 small red onion, chopped into pieces
1/4 cup sunflower seeds
1/4 cup hemp hearts
1 1/2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup
1/4 cup extra old cheddar, (optional)
Directions:
1.Mix together all the wet ingredients with the garlic powder, salt and pepper. Add in the dry ingredients and mix well. Eat as a lunch item, a side dish or a snack throughout the day. Will keep in the fridge for around a week.
