Almond Chocolate Chip Cookies
Add some cinnamon to your cookies for a little extra something!
Ingredients:
-2 1/4 cups barley flour
-1 tsp baking soda
-3/4 tsp pink Himalayan salt
-1 cup unsalted (preferable grass fed) butter (or virgin coconut oil)
-1/2 cup raw cane sugar (the brown one) or coconut sugar
-3/4 cup dark brown sugar (light works too)
-1 tbsp pure maple syrup
-1.5 tsp pure vanilla extract
-2 large eggs
-1 package dark chocolate chips
-1 cup chopped raw almonds (or nut of choice such as walnut or pecan)
Directions:
1.Heat oven to 375F.
2.Stir together flour, baking soda and salt in a mixing bowl. In a separate and large mixing bowl, mash together butter, both kinds of sugar, maple syrup and vanilla until smooth. Add the 2 eggs and beat well. Gradually add the flour mixture and keep mixing until it is a smooth consistency. Add the nuts and chocolate chips. Drop rounded spoonfuls onto an ungreased cookie sheet and put on the middle rack of the oven.
3. Bake 10 minutes or until lightly brown on the top of the cookies. Remove from oven and remove from tray right away. Let cool for about ten minutes before eating!
